There’s nothing quite like a cold Sunday morning and warming up with some buttermilk pancakes. My dad used to always make me pancakes on Sundays growing up, and I was so happy when I made these, he had the same reaction I used to when he made me pancakes. And it was even better that I used his spices in something so sentimental and delicious! All those fall feelings were truly bloomed in these pancakes and will surely make your fall season richer.
1 large egg
¾ cup buttermilk
1 cup pancake mix (I used Stonewall Kitchen)
1 tbsp butter, melted
1/3 cup oats
1 tbsp Mendocino Spices Pumpkin Spice Blend
– Heat a griddle or pan to 350 degrees F or medium low heat.
– Whisk together buttermilk and eggs until well combined. Add pancake mix and continue to whisk until well combined. Add melted butter and continue to whisk until well combined.
– Gently mix in oats and Mendocino Spices until combined.
– Spray pan or griddle with cooking spray or use butter. Using a ¼ cup, scoop some pancake batter onto the pan or griddle and flip once bubbles start to form in the center of each pancake.
– Serve with maple syrup and freshly whipped cream.
