Around the holidays, green beans are often the obligatory side dish you must put on your plate just to make it look green and ‘healthy.’ However, the vicious cycle stops now with these green beans seasoned to perfection with Mendocino Spices All-Purpose seasoning, accompanied by a creamy tahini dressing. Because of the tahini dressing, it’s almost like you’re eating a fancy snack because the flavor closely resembles a classic hummus. The dressing is what makes this side dish; therefore, you can use your favorite vegetable or even create a medley!
1 lb green beans
1 head garlic, peeled
2 Pepitos Chilitos De Arbol
Mendocino Spices All-Purpose Seasoning, to taste
EVOO
½ lemon, squeezed
3 tbsp tahini
2 tbsp Greek yogurt
– Put the garlic cloves and Pepitos Chilitos in your smallest saucepan, and cover with EVOO until submerged. Put over the lowest heat setting and cook for 15 minutes or until fork tender. Scoop out and allow to cool.
– Put the garlic and 1 Pepitos Chilitos in a small food processor or mortar, add the tahini, lemon, and yogurt. Pulse until smooth and add a splash of garlic + Pepitos infused EVOO (2-4 tbsp) for a drizzling consistency and season with Mendocino Spices All-Purpose seasoning.
– Blanch the green beans until tender, about 4-6 minutes. Drain and toss with some of the garlic + Pepitos infused olive oil and Mendocino Spices All-Purpose seasoning, to taste. Serve on a platter and drizzle with tahini dressing.
