No matter what time of the day it is or how old you are, a grilled cheese sandwich is the peak of crave-worthiness. But of course, elevated with a hint of spice. Although, this is a rendition of the classic sandwich, it doesn’t takeaway any of the best elements you would want in a grilled cheese. And you’re just going to have to try it yourself to believe me!

Chili Butter:
2 sticks salted butter
2 tsp Mendocino Spices smoked paprika
1 ½ tsp Mendocino Spices ground de arbol
1 tsp Mendocino Spices Aleppo pepper
¼ tsp Mendocino Spices ground black pepper
1 shallot, finely chopped
2 garlic cloves, grated
½ lime, juiced (optional)
Grilled Cheese:
2 slices sourdough or Italian bread
2 oz Monterrey jack cheese
2 oz Fontina cheese
2 tbsp chili butter
-Lather the two slices of bread with chili butter.
-Heat a small skillet (nonstick, ideally) over medium heat. Place one slice of bread, chili butter side down, in skillet; layer with cheeses. Top with second slice of bread, butter side up.
-When the under side is golden brown, about 4 minutes, flip sandwich. Continue to cook until second side is golden brown, and cheese is fully melted.
