Football season is upon us, and what goes better with football than a batch of spicy wings. Because these are not your typical hot wings, the depth of flavor is a little spicy, sweet, and garlicky. The marinating process is crucial to infuse all those flavors beyond the skin of the wings and makes them so much more enjoyable to eat. You can opt to put these in the air fryer for a faster and crispy result as well.
3 lbs chicken wings
2 tbsp baking powder
2 tbsp brown sugar
1 tsp Mendocino Spices Ground Chile Ancho
1 tsp Mendocino Spices Ground Chile Chipotle
2 tsp Mendocino Spices Granulated Garlic
2 tsp Mendocino Spices Granulated Onion
2 tsp Mendocino Spices Ground Paprika
2 tsp salt
2 tsp Mendocino Spices Ground Cumin
½ tsp Mendocino Spices Ground Cayenne
1 squeezed lime (optional)
1. Dry chicken thoroughly on paper towels and mix baking powder, sugar, salt, and spices altogether. Toss wings in dry rub.
2. Marinate wings in a Ziploc bag with additional leftover dry rub and juice of 1 lime for a more citrus flavor for 4 hours or overnight.
3. Preheat oven to 400 degrees and line a baking sheet with foil and parchment paper for easy clean up. Arrange wings on sheet accordingly so they are not touching.
4. Bake on middle rack for 45 minutes. At the 25-minute mark flip wings and resume cooking for the remaining 20 minutes or until desired crispiness.
5. Serve immediately and enjoy with a side of ranch!
