Rice is a standard side to many weeknight meals. Plain rice is great for leftovers to recreate a new meal like fried rice, crispy rice, or poke bowls. But when you don’t have plans to make something new, steaming plain rice can be a bit boring. Adding a few fresh ingredients and Mendocino Spices can refresh your rice into a lemony exciting side dish that you will look forward to even as leftovers.
2 tbsp butter
1 cup uncooked long-grain white rice
1 tsp minced garlic
1 1/2 cups water
1 lemon, juiced
1 tsp Mendocino Spices Lemon Pepper Seasoning
1. On an Instant Pot, press the Sauté button and adjust to High. Add butter and sauté about 4 minutes until golden and nutty.
2. Add rice and garlic and continue cooking for 1-2 more minutes until rice is toasted. Press Cancel button to turn off heat.
3. Add water, lemon juice, and Mendocino Spices lemon pepper; deglaze the pot, scraping all the browned bits off the bottom pot.
4. Close the lid; turn knob to Sealing.
5. Press Manual or Pressure Cook button and adjust time to 6 minutes.
6. When the timer beeps, allow 10 minutes to naturally release the pressure, then remove the lid.
7. Fluff rice with a fork and enjoy with Harissa Meatballs or Lemon Pepper Salmon.
