You may not be a Kardashian fan, but you’ll have to admit after trying this that they know a thing or two about a mouthwatering salad. And rarely do I put mouthwatering and salad in the same sentence, so it really is that serious! I implore you to check out Mendocino Spices Italian Seasoning because it’s such a great ingredient in dressings, pastas, and so much more. It is a crucial seasoning in this chopped salad and any salad because let’s face it, eating vegetables does not come naturally for all of us.
1 1/2 cups Romaine lettuce, chopped
½ cup cabbage, shredded
½ small cucumber, chopped
¼ cup artichoke hearts, chopped
¼ cup sun-dried tomatoes, chopped
2 oz salami, chopped
1/3 cup fresh mozzarella balls
½ cup chickpeas
Dressing:
2 tbsp EVOO
1 ½ tbsp red wine vinegar
2 tsp Dijon mustard
¼ cup Parmesan, grated
1 tsp Mendocino Spices Italian Seasoning
Mendocino Spices All-Purpose Seasoning, to taste
– Start by mixing all the dressing ingredients. In a deep bowl for your salad, mix ½ the dressing with the chickpeas. Set aside.
– In a large bowl, mix the Romaine lettuce, cabbage, cucumber, artichoke hearts, sun-dried tomatoes, salami, fresh mozzarella, and remaining dressing.
– Place salad mixture in prepared bowl with chickpeas. Compress so that the salad fits in the bowl. Stack a plate on top of the bowl and flip the bowl and plate at the same time using two hands. Lift the bowl carefully, garnish with fresh chives, and serve immediately.
