This go-to breakfast burrito gives all the flavors of chorizo without the chorizo. With the addition of harissa in your scrambled eggs, cheese, and avocado you’ll have just enough energy to tackle the day without being weighed down by a heavy breakfast.
1 large tortilla
2 eggs
1 tbsp harissa paste
½ avocado, sliced thin
2 oz shredded cheddar cheese

-Heat small skillet over medium low heat.
-In a small bowl whisk together eggs.
-Add harissa paste to skillet with whisked eggs and continue stirring until paste is evenly combined with eggs. Cook until eggs look slightly firm, but still wet. When it reaches this point, cover and remove from heat.
-In a large pan, heat up your tortilla over medium heat. After you flip it, add cheddar cheese and cook until cheese is melty.
-Assemble burrito. Add eggs to the center of the tortilla and layer with avocado. Fold in the sides of the tortilla over the filling and roll, tucking the edges as you go.
-Cut in half, serve with salsa, and enjoy.
