TikTok was onto something, once again, when they made this recipe viral. It will be extremely hard for me to make potatoes any other way after making these because they’re so easy to prepare yet so flavorful. Although it’s extra labor, it’s important not to discount the crosshatching step in this recipe to allow the Mendocino Spices and Parmesan adhere to the potato and make it crispy deliciousness.
2-3 tbsp unsalted butter
24 oz baby Yukon Gold Potatoes, halved
½ cup Parmesan cheese, freshly grated
2 tsp Mendocino Spices Italian Seasoning
1-2 tsp Mendocino Spices Garlic Salt
1. Preheat oven to 425 degrees F.
2. Place butter in a 9 x 13-inch baking dish or nonstick baking pan and place in the oven until butter melts.
3. While the butter melts, score the potatoes about ¼ inch deep in a diamond patter (crosshatch). Set aside.
4. Remove the pan from the oven and let cool slightly, about two minutes. Stir Parmesan cheese and Mendocino Spices into butter to form a paste.
5. Spread the paste evenly across the baking pan and arrange cut side down pressing potatoes firmly into the Parmesan paste.
6. Place in the preheated oven and bake until potatoes are tender and the Parmesan cheese creates a golden crust on the bottom of the potatoes, about 25 minutes. Let stand for 5 minutes before using a spatula to release potatoes from the pan.
