This recipe for pork and shrimp egg rolls utilizes one of my favorite kitchen tools – the air fryer. For some reason, I love using an air fryer because it makes cooking a little less intimidating for me. I can throw almost anything in there and I know it’s going to come out crispy and fully cooked! Surely, these are not authentic egg rolls, but the Ground De Arbol kicks up the spicy flavors that make this feel like it is almost from your favorite takeout Chinese restaurant. These egg rolls are proof you don’t need to leave your kitchen to have a restaurant quality meal as long as you’re stocked with Mendocino Spices!
1/2 lb ground pork
1/4 lb shrimp, ground or finely chopped
1 cup coleslaw mix
1/2 cup celery finely diced
3 green onions finely chopped
2 garlic cloves minced
1 tbsp soy sauce
1/2 tbsp Mendocino Spices all-purpose seasoning
1/2 tsp Mendocino Spices black pepper
1/4 tsp Mendocino Spices ground chile de arbol
1 egg white
8-10 egg roll wrappers
In a large bowl mix together pork, shrimp, coleslaw mix, celery, green onions, garlic, soy sauce, and Mendocino Spices. Mix until everything is well combined.
Place egg roll wrapper in a diagonal position and place about 1/4 cup of filling in the middle of wrapper.
With a basting brush, brush the edges of the wrapper with egg white. Proceed to fold in the side corners and roll securely.
In an air fryer, cook at 365 degrees F for 10-12 mins or until crispy. Fry 3-4 egg rolls at a time and spray generously with cooking spray.
Enjoy with sweet Thai chili sauce or soy sauce!
