– 1 1/3 cups flour
– 1-2 tbsp Mendocino Spices Pumpkin Spice Blend
– 1 tsp baking soda
– ½ tsp salt
– 15 oz can pumpkin puree
– 1 cup sugar
– ½ cup brown sugar
– 2 large eggs
– ½ cup butter, melted
– 1 tbsp vanilla extract
– 8 oz cream cheese
– ¼ cup sugar
– 1 egg yolk
– Preheat oven to 375 degrees F.
– In a medium bowl, whisk together flour, Mendocino Spices Pumpkin Spice blend, baking soda, and salt until well combined.
– In an electric bowl mixer, blend pumpkin, sugar, and brown sugar.
– Beat in melted butter, eggs, vanilla extract. Gradually add in flour mixture and blend until evenly combined.
– In a small bowl, add cream cheese, sugar, and egg yolk and whisk until smooth.
– In a muffin tin add muffin liners, ¼ cup of pumpkin batter each, and 2 tbsp of cream cheese mixture each.
– Bake for 15-18 minutes and top with additional Mendocino Spice Pumpkin Spice Blend!
