If you haven’t noticed by now, my mom is the greatest inspiration for the recipes I create! Except with this recipe, I was inspired by a smoked paprika potato salad she made and ended up putting my own Mendocino spin on it. The Cajun flavors in this recipe are salty, smoky, and delicious courtesy of Mendocino Spices Cajun Seasoning. You’ll be eating this as a side to every meal until its all gone!
2 lb small baby potatoes
4-5 hard-boiled eggs, cooled, peeled, and chopped
1 cup mayo
¼ cup sour cream
½ cup green onions, finely chopped, plus more for garnish
2 tbsp Mendocino Spices Dried Parsley
2 tbsp Mendocino Spices Cajun Seasoning
Mendocino Spices All-Purpose Seasoning, to taste
1 tbsp Dijon mustard
1 tsp hot sauce
½ lemon, juice
¼ cup capers
1/3 cup cornichons, finely chopped (optional)
Garnish, Mendocino Spices Smoked Paprika

-Wash and cut potatoes in 1-inch pieces. Boil in a large pot of water until soft. Drain.
-Mix mayo, sour cream, Mendocino Spices, hot sauce, lemon, Dijon mustard, and capers. Season to taste with Mendocino Spice All-Purpose seasoning.
-In a large bowl, add boiled potatoes, hard-boiled eggs, green onions, cornichons, and Cajun mayo.
-Plate on a large platter and garnish with Mendocino Spices Smoked Paprika, fried onions, and more green onions. Serve cold or at room temperature for a backyard barbecue or football Sunday.
