Although it’s so easy to buy a can of beans that are ready to eat, it’s worth the effort to make your own. The utility of a crockpot ceases to amaze once again, because with these beans you set it and forget it until it’s time to change the temperature. The flavor in these beans are better and are extremely convenient to pull out of your freezer when you need them.
2lbs beans
1 large onion, finely chopped
4 tbsp garlic, minced
2 ½ tbsp salt
1 tsp Mendocino Spices Ground Black Pepper
2 tsp Mendocino Spices Ground Cumin
1 Pepitos Chilitos Chipotle Pepper
10 cups hot water
1. Rinse the beans in a colander. Pick out any bad beans.
2. Combine all ingredients in a crockpot. Remove any floating beans. Cover and cook on HIGH for 4 hours followed by LOW for 2 hours.
3. Uncover and remove extra liquid. Leave enough liquid to reach desired consistency when the beans are mashed.
4. Store in 16 oz containers and freeze.
