New Year’s naturally is the season full of expectations because everyone wants to whip themselves back into shape before summer/vacation. The pressure can be overwhelming especially if you’re not savvy at planning meals ahead of time. Luckily, with Mendocino Spices we have you covered with these meal prepped salads. They’re so fun/easy to make and they look so pretty sitting in your fridge you’ll be inspired to eat a salad! You can save yourself time by also getting precut vegetables from your nearest grocery store and substitute the veggies in this recipe for your favorites. After shaking the contents of your salad and pouring it into a bowl, I highly recommend topping with Mendocino Spices Black Pepper Butcher’s Cut for an extra little bite!
Ranch Dressing:
1 cup whole milk
1 cup mayo
3 tbsp + 1 tsp Mendocino Spices Ranch Salad Dressing Mix
Salad Ingredients:
Carrots, coarsely chopped
Red or Yellow Bell Pepper, coarsely chopped
Cucumbers, coarsely chopped
Red onion, finely chopped
Cherry tomatoes, halved
Cheddar cheese, grated (optional)
Romaine, chopped
Mendocino Spices Black Pepper Butcher’s Cut, for garnish
In a small mason jar or bowl mix milk, mayo, and Mendocino Spices Ranch Salad Dressing Mix.
Prepare 4 mason jars by adding ¼ cup of ranch dressing to the bottom of the jar. Add the densest ingredients first starting with carrots, then bell peppers, then cucumbers, red onion, cherry tomatoes, and lastly cheddar cheese. Press the romaine lettuce into the top of the jar, then seal.
Refrigerate for up to 4 days.
Shake the jar salad out into a bowl and garnish with Mendocino Spices Black Pepper Butcher’s Cut.
