Who doesn’t love a pasta salad?? This is the pasta salad you won’t be able to stop eating at a backyard barbecue or football Sunday. The creamy dressing has a subtle amount of tangy, lime flavor courtesy of Pepitos Chilitos Pico de Gallo Salt, while the corn and green onions bring a freshness that balances all the ingredients together.
1 lb pasta
4 cups of frozen corn, thawed
1/2 small red onion, chopped
1 red bell pepper, finely chopped
2-3 jalapeños, finely diced
3 green onions, sliced thinly (green and white parts)
6 oz crumbled queso fresco
2 oz crumbled cotija
Dressing:
2/3 cup mayo
2/3 cup sour cream
2 limes, juiced
1 tsp Pepitos Chilitos Pico de Gallo Salt
– Cook pasta according to package directions.
– Mix dressing ingredients altogether. Mix pasta ingredients altogether, serve with extra Pepitos Chilitos Pico de Gallo salt.
