You have never craved brussels sprouts until you have had them in gratin form. Although brussels sprouts is dubbed as a healthy veg, this is the opposite of healthy and does not even taste like you’re eating a vegetable! This recipe is decadent and rich for the holiday season, masking all vegetable flavors with Mendocino Spices.
3 slices thick-cut bacon
1lbs brussels sprouts, shredded
1 small yellow onion, finely diced
4 garlic cloves, minced
2 tsp Mendocino Spices All-Purpose Seasoning, to taste
2 cups heavy cream
1 tsp Mendocino Spices Ground Thyme
½ tsp Mendocino Spices Ground Black Pepper
1 pinch Mendocino Spices Ground Nutmeg
1 cup Gruyere cheese, freshly grated
Topping:
¾ cup panko breadcrumbs
2 tbsp butter, melted
¼ cup Mendocino Spices Crispy Shallots
¼ tsp Mendocino Spices Ground Cayenne Pepper
– Preheat oven to 425 degrees F. Lightly coat an 8 x 8-inch with cooking spray. Set aside.
– In a large skillet, cook the bacon over medium/low heat until crisp, about 8 to 10 minutes. Remove the bacon to a paper-towel lined plate, pat dry, and let cool. Discard all but 1 tablespoon of the bacon drippings from the pan.
– Place the pan back on the heat and increase the heat to medium/high heat. Add the onions, garlic, and season liberally with Mendocino Spices All-Purpose seasoning. Stir occasionally and cook until onion is translucent.
– Transfer the onions and garlic to a large bowl along with shredded brussels sprouts, toss to combine.
– Using the same skillet, add the cream, Gruyere, and Mendocino Spices. Bring to a simmer stirring continuously until cheese melts and a thick sauce is achieved, about 3-4 minutes.
– Pour the sauce over sprouts mixture and toss to coat.
– Transfer the creamy sprouts mixture into the prepared baking dish. Place it in the center oven on the center rack for 20 minutes.
– In a small bowl, combine the panko, butter, and Mendocino Spices.
– Scatter breadcrumb mixture over sprouts and return to oven until golden brown, about 5 to 8 minutes.
– Top gratin with crumbled bacon and serve immediately.
